What makes the food you cook special?

Flexibility. Whatever your favorite dish is - I've probably made it. And if I haven't, I'd love to try it.

Tell us your personal story.

My first food memory is of walking into the bakery my father owned when I was 5 and the heavenly smell of doughnuts, pies, and cakes. To this day, that smell makes me a little nostalgic. I've been cooking ever since I was a kid and my mother told me: "It doesn't matter if you get married the day to move out, you still need to know how to cook". Thanks mom! Cooking was just utilitarian for me for a long time - just something I needed to do to survive. Until the first time I cooked for the woman who is now my wife - her reaction when she saw the food I'd made for her was addictive. At that moment, I finally "got" the emotional component of food. Well made food is a physical expression of love. After that, I started cooking *real* food (not just chicken patty sandwiches) 3 or 4 times a week, until my wife finally said: "Why don't you go to cooking school and learn from some experts?" I did, and here we are, 10 years later and I just can't imagine going 48 hours without cooking or baking something.

What is your favorite dish to cook, and why?

On the first day of cooking school, they told us: "Everyone in this room is either a chef or a baker. You may not know which you are, but you will by the time you graduate". I didn't know that day, I didn't know when I graduated, and I still don't know. I just couldn't choose one over the other - there is just too much yummy food out there to limit it to just one thing.

Is there anything else you wish to tell your customers?

I am a proud graduate of the Cambridge School of Culinary Arts. I am happy to modify my dishes to fit your needs - vegetarian, vegan, low fat, Feingold diet, allergies - whatever your special need, I can probably accommodate it. I have several sources of local and/or organic produce, meat, and dairy products that I love. I've recently lost 20 pounds, so I am quite open to your nutritional concerns - I can give you a full nutritional breakdown of anything I make for you.
