What makes the food you cook special?
The ability to make a meal from nothing! This was the staple of the black slaves as well as there descendants in the south. Through hard times, oppression and necessity, came creativity. My mother was born in 1926 and grew up in Mississippi. Because of segregation, and lack of opportunity, blacks were forced to do for themselves in just about every facet one can think of. Creativity is definitely the word that comes to mind when describing blacks in the south. We created Negro spirituals and different forms of spirited music, as well as different forms of cooking that seem to attract others. Though most opportunities were scarce for blacks, one particular form of employment was always available to the women. Black maids were often sought out because of there creativity in the kitchen. Today these women would be considered expert chefs in there field of cooking. This tradition has been passed down from generation to generation, and we would like to offer this to you today.
