What makes the food you cook special?
Our focus is on providing clients with menus that rich are in whole foods. Incorporating whole grains, gathering produce, meat and dairy from local farmers' markets and baking with natural sugar alternatives. Allow me to deliver nutrient dense foods that are long on flavor. At Olla we use hand picked, seasonal organic produce grown in upstate New York sourced from nearby farms (Farm to Chef). Organic, sustainable and local is the cornerstone upon which Olla is built.
Tell us your personal story.
From the moment I could reach the kitchen counter I’ve been cooking.My father is a farmer who cultivates his own orchard in our backyard. Respect for the land and the food it produces was ingrained in me from a very early age. I believe my curiosity about cooking and the power of nutrition developed naturally. Growing up, food and family meals were at the center of our lives. During the time that I was pursuing a career in the art world, I continued to cook at home as often as I could; I also began to be more and more aware of the effect of food on health. I am now convinced of the tremendous impact of nutrition on well-being, and feel that as a culture our awareness of this issue must come to drive our eating and farming practices. Having lived in the U.S., Italy, and Nicaragua and traveled extensively during the past few years, I’ve had a range of exposure to what and how and why people eat, and I’ve come to realize that nothing interests me more. I was taught at an early age that food, land, and health were intimately connected. There is nothing else I rather be doing than working in the kitchen and helping others get the nourishment they need!
What is your favorite dish to cook, and why?
I love to cook with what is in season, going to the farmer's market and getting inspired by what they have available, that is my favorite way to prepare meals. I enjoy asking farmers what they suggest for recipes with their produce which they know best, then taking what I know, combing the two and coming up with something totally delicious.
Is there anything else you wish to tell your customers?
I am a graduate of the Natural Gourmet Institute in New York City and my focus is on providing clients with menus that are rich in whole foods.
